Tex-Mex Shepherd's Pie

An American-Mexican twist to a classic dish.

Ingredients
  

Ingredients:
  • 1 lb Ground Beef
  • 1 med. Onion (Optional)
  • 1 Jalapeno, diced (Optional)
  • 1 can Green Beans Drained
  • 1 can Sweet Corn Drained
  • 1-2 cups Shredded Cheese (cheddar, taco blend, etc.)
  • 1 ½ cup Taco Sauce (more to keep mixture moist)
  • 1 mix Gluten Free Cornbread

Method
 

Instructions:
  1. Make cornbread batter per packaged instructions, set aside.
  2. Preheat oven to 400° and grease 9x13 pan, set aside.
  3. Cook ground beef in a large skillet over medium heat, until no longer pink.
  4. If necessary, drain excess fat from pan.
  5. Add onion and jalapeno to meat, if using. Cook about 5 minutes, stirring so nothing burns.
  6. Mix canned green beans and corn into meat mixture. Cook to a simmer.
  7. Pour taco sauce into pan and mix until well combined.
  8. Remove pan from heat. Sprinkle cheese over meat mixture and stir until cheese starts to melt.
  9. Pour meat mixture into 9x13 pan, spreading evenly.
  10. Pour cornbread batter over meat mixture, spread evenly with spatula. If your mix makes a large amount of cornbread batter, divid the batter and use half for the meat. Pour the other half of the batter into a muffin tin and bake after the pie is done.
  11. Bake 35-45 minutes until cornbread is cooked through. Test with the toothpick method.
  12. Let pan cool 5-10 minutes before serving.
  13. Enjoy!

Notes

  • Use whatever canned veggies you and your family prefer.
  • Adjust cheese and taco sauce ratio to your liking. Remember, if you are using pre-shredded cheese, always check the ingredients because some companies use wheat or other gluten ingredients to coat the cheese to prevent it from clumping.
  • Adjust the heat of the dish by adjusting the heat level of the taco sauce and the diced jalapeno. 
  • Roughly 600 calories for ⅙ of recipe.
  • I like to use Bob's Red Mill Gluten Free Cornbread Mix, or make my own: "The Best Cornbread"
  • Also, I know Shepherd's Pie is traditionally made with lamb, while Cottage Pie is made with beef.
