Delicious gluten free protein balls that are 135 calories each! Enjoy this treat after a workout, on the go, or for a delicious, healthier late night snack option. Be sure to use gluten free oats to keep them Celiac Safe.

Ingredients
  

  • 1 Cup Peanut Butter
  • ½ Cup Honey
  • ½ Cup Oats (Gluten Free)
  • 2 Scoops Vanilla Protein Powder
  • ½ tsp Vanilla
  • ½ tsp Salt
  • 1 TBSP Cocoa Nibs or Chocolate Sprinkles (Optional)

Instructions
 

  • Mix together peanut butter, honey, protein powder, vanilla, and salt.
  • Stir in gluten free oats. Add in cocoa nibs or sprinkles, if using.
  • Use cookie scoop, or a spoon and roll into shape, to make about 17 1-inch protein balls.
  • Store protein balls in an airtight container in the fridge. Use parchment paper between layers to prevent sticking and clumping.

Notes

  • If you choose to use agave nectar, start with a ¼ cup and add 1 TBSP at a time until you reach your desired consistency. Using ½ cup will result in very soft protein lumps that won't hold their shape as well. They are just as delicious!
