Gluten Free Chicken Nuggets

Ingredients
  

  • 3 Chicken Breast
  • 2 Eggs
  • 1½ - 2 Cups Gluten Free Flour or Breadcrumbs
  • 1 TBSP Garlic Powder
  • 1 TBSP Onion Powder
  • 1 tsp Cayenne Pepper (Optional)
  • Salt & Pepper (To taste)

Instructions
 

  • Preheat oven to 375° and spray two baking sheets with non-stick spray. (Most cooking sprays are gluten free, but those intended for baking might not be.)
  • Cut chicken into 1" cubes.
  • In a small bowl, crack eggs and stir together until egg whites and yokes are combined.
  • In a separate bowl, combine flour and spices.
  • Arrange your work space as follows for a smooth assembly line: cubed chicken, egg wash bowl, flour mixture bowl, sprayed baking sheets.
  • Using one hand, place a few pieces of chicken into egg wash to coat. Tap excess egg wash and transfer chicken pieces to flour mixture bowl.
  • With your other hand, dredge the chicken in your flour mixture to coat evenly. Tap off any excess flour.
  • Arrange chicken nuggets on baking sheets so they are not touching.
  • Repeat until all chicken pieces are coated.
  • Bake chicken nuggets for 15 minutes.
  • After the nuggets are baked, keep in oven and broil on high for 5 minutes to help the flour crisp up.
  • Remove from oven and cool slightly before devouring.

Notes

  • Bake and broil times may vary depending on nugget size, and your oven. Please watch carefully so they do not burn. 
  • Again, when using a cooking spray please double check it only contains gluten free ingredients. Some baking sprays uses flour to help cakes not stick to pans, which would not be gluten free. 
  • You can also use silicone baking mats or aluminum foil instead of cooking spray.
  • In the past, I have used store bought gluten free bread crumbs, gluten free flour, and even rice flour for my chicken nuggets. I find rice flour stays crispy longer, but flour absorbs more sauce if you are coating them rather than dipping.
  • Change up the spices to change the flavor profile of your nuggets. Try Italian seasoning or add some curry powder for a change.
