Method
- Mix together peanut butter, honey, protein powder, vanilla, and salt.
- Stir in gluten free oats. Add in cocoa nibs or sprinkles, if using.
- Use cookie scoop, or a spoon and roll into shape, to make about 17 1-inch protein balls.
- Store protein balls in an airtight container in the fridge. Use parchment paper between layers to prevent sticking and clumping.
Notes
- If you choose to use agave nectar, start with a ¼ cup and add 1 TBSP at a time until you reach your desired consistency. Using ½ cup will result in very soft protein lumps that won't hold their shape as well. They are just as delicious!
