Lemon Cake Bites

Add flavor and character to a simple cake mix and pre-made frosting.

Servings: 50 Cake Balls

Ingredients
  

  • 1 Box Gluten Free Cake Mix
  • 1 Tub Frosting
  • 2 TBSP GF Cake Enhancer (Optional)
  • 1 Bag Melting Chocolate
  • 5-15 Drops Lemon Essential Oil (Food Grade)
  • Sprinkles (Decorative)
  • Extra Melting Chocolate (Decorative)

Method
 

  1. If using cake enhancer, mix it into dry cake mix.
  2. Mix cake per package instructions.
  3. Add flavoring to cake batter. Start with 5 drops, stir, sniff batter, and add a few more drops at a time, if needed.
  4. Bake cake according to instructions. Cool on wire rack 10-15 minutes before removing from cake pan.
  5. While cake is baking and cooling, mix essential oil into frosting starting with 5-10 drops to start. Taste and adjust flavor according to preference. Set aside.
  6. Once cake is cooled, begin to crumble the cake. Break all big chucks of cake. Pro tip: remove outer layer to avoid extra crispy bits.
  7. Starting with half the tub, dump frosting into crumbled cake.
  8. Mix frosting and cake crumbs together until it forms a solid ball. Round cake mixture into balls 1 tsp to 1 TBSP in size (the smaller the cake bites to more you will get). Place on cookie sheet.
  9. Place cookie sheet in fridge until firm, about 30 minutes.
  10. Melt chocolate according to package.
  11. Dip cake balls into chocolate, tapping off excess, and place back on tray.
  12. Add sprinkles while chocolate is still wet or tacky. Drizzle with different colored chocolate for a finished look.
  13. Let chocolate set until firm.
  14. Enjoy!

Notes

  • Always check the essential oil you are using does not contain a carrier oil, such as olive oil or coconut oil. Use a quality oil since it will be baked and consumed. I used Young Living Essential Oil because they have a food line, Vitality.
  • Feel free to use flavoring extracts instead of essential oils. Oils not your thing? You can even buy flavored pre-made frosting (lemon or strawberry).
  • Change the color of sprinkles and chocolates for any occasion.
