Candy Cookies
Candy Cookies, No Bakes, Gorilla Poop…whatever you call these cookies, they are delicious! And, no baking required (hence the name: no bakes).
When I don’t feel like heating up the kitchen to make a dessert, I usually make Candy Cookies because I always have the ingredients on hand. Most of the ingredients are naturally gluten free, but be sure the oats you are using are certified gluten free. Unfortunately, standard oats are processed on shared equipment with wheat. Certified GF oats can be found at Walmart, regional grocery stores, health food stores, and online.
Candy Cookies
Ingredients
- 2 Cups Sugar
- ¼ Cup Butter
- 3 TBSP Cocoa Powder (Heaping)
- ½ Cup Milk
- ½ Cup Peanut Butter (Creamy or Chunky)
- 3 Cups Gluten Free Oats
- ½ Cup Shredded Coconut (Optional)
- 1 tsp Vanilla
Instructions
- Before you cook anything, assemble your ingredients and prep your work station. Line a section of your counter with wax paper or aluminum foil to drop cookies onto.
- In a medium sauce pan, heat butter over medium heat.
- Once the butter begins to melt, mix in sugar, cocoa powder, and milk. Stir to combine.
- As soon as the butter mixture starts to boil, boil for exactly 1 minute, stirring constantly.
- After 1 minute of boiling, remove the pan from heat and stir in peanut butter, GF oats, vanilla, and shredded coconut (if using).
- Using two spoons or a cookie scoop, drop cookies onto wax paper or aluminum foil. Allow the cookies to cool and harden before serving.
Notes
- Shredded coconut is optional and something I started adding in recent years, once I learned the I love coconut.
- Always double check that your oats are certified gluten free.
